Nothing But Jerk

Hello everyone… long time no blog.

But I have a good excuse, I promise… I was out of the country, in Jamaica, for my sister’s wedding. What an absolutely beautiful wedding it turned out to be, with a stunning backdrop at a beautiful all-inclusive resort, filled with loved ones.

18446790_743314909126362_6102384162271360635_nI know this time was supposed to be all about my sister but when you’re a foodie sometimes you catch yourself only thinking about food. Man, did I have some great food. The majority of what I ate was jerked; Jerked chicken, pork, shrimp, beef, ox tail, and vegetables… you name it, I probably tried it. If you do not know what the term jerk is here you go: Jerk is a style of cooking that is native to Jamaica in which meat is dry-rubbed or wet marinated with a spicy spice mixture called Jamaican jerk spice.


It wasn’t all about the jerk though, it was also about the pure freshness of their food. Nothing processed or pre packaged just truly fresh.18425364_744833092307877_471633866046741592_nBreakfast one morning: Made to order omelette, fresh watermelon so sweet that it could a dessert, bacon and a side of roasted potatoes. 18446618_744832578974595_378758317676897778_nStuffed eggplant: Roasted eggplant filled with marinated mushrooms and squash topped with goat cheese and a marinara sauce.  18446677_744832585641261_8687192135670001848_nMushroom ragout: A puff pastry filled with mushroom argue. The garlic, thyme and rosemary was balanced so perfectly.18556123_744832678974585_2768295711571761419_nDessert: 3 layer chocolate cake with a white chocolate drizzle on the side.
